Cannabis-infused Peanut Butter Cookies
Yields 24 medium size cookies
– ½ C of cannabutter
-1 C of crunchy peanut butter
2 T of shortening
2 t vanilla
1 C of flour
½ C of sugar
½ C of brown sugar
½ t of baking soda
½ t of baking powder
½ t of sea salt
Additional: sea salt and white sugar to put on top. Also, if desired, ½ cup pf bacon bits can be added to kick up the potency.
The oven is the first thing to set up so it’s ready beforehand. Preheat it to 350˚F and also grease two baking sheets and set aside. Then, the dry ingredients should be mixed together in a medium-size ball: flour, sugar, baking soda, baking powder and salt. Stir it until it is combined. In a different bowl, add the beat cannabutter, shortening, peanut butter, egg and vanilla together until it is evenly combined.
Once both mixtures are ready it is important to all the dry ingredients into the wet ingredients little by a little while using a wooden spoon to fully incorporate it. If bacon bits are desired, this is the best time to add them to the mixture.
In the greased baking sheet, start dropping the cookie dough with a tablespoon and use a fork to press the dough and flatten it, once from each side, forming like a grid on top of the cookie. Sprinkle a mixture of one-part sea salt and two parts sugar lightly over the tops of the cookies. Bake for 10-12 minutes or until the cookie tops looks cracked.
