This recipe may not be for everyone, but it will certainly make a splash
Few saints are celebrated like St. Patrick, the Patron Saint of Ireland. Colorfully painted faces, shamrock accessories, parades, dances, and endless revelry characterized by the color green are part of what you can see on today’s holiday. If you want to have fun today and celebrate this day in the best way, you can do so by preparing cannabis-infused cupcakes. It is a simple recipe that will certainly make your March 17 different.
Once you have infused the butter or cannabis oil according to your preferences, make sure you get these ingredients for the Guinness chocolate cupcakes:
1/2 pound (2 sticks) of cannabis-infused butter
1 C Guinness extra stout
2/3 C dark cocoa powder, sifted
1 t salt
2 C all-purpose flour
2 C brown sugar
1 1/4 t baking soda
2 eggs (or egg replacer)
1/2 C sour cream
Start by preheating the oven to 350 degrees. Lightly grease 24 to 30 muffin tins or line them with paper liners. In a heavy saucepan, heat the infused butter, Guinness and dark cocoa powder until the butter melts and the mixture is smooth. Remove the pan from the heat and allow the mixture to cool.
In a large bowl, sift together the salt, flour, sugar and baking soda. Add the Guinness-cocoa mixture and beat for one minute at medium speed. Then add the eggs or egg substitute and sour cream and beat for another two minutes at medium speed.
Divide the batter evenly among the prepared muffin tins. Bake for about 20 to 25 minutes or until a wooden toothpick poked into the center of the muffin comes out clean with no cupcake residue.
For the frosting, you can use about four cups of confectioners’ sugar, one stick (1/2 cup or 4 ounces) of unsalted room temperature infused butter, a pinch of salt and about four tablespoons of Bailey’s Irish Cream or to taste. Cream the butter until light and fluffy. Slowly add sugar and a pinch of salt, a little at a time. Once combined, add Bailey’s and beat on high until the mixture is fluffy and smooth.
