Heat up the skillet and get ready for a hearty breakfast, complete with cannabis hash browns

Cannabis in the kitchen is finding new ground all the time. Gourmet chefs, and even novice cooks, are experimenting with recipes and cannabis-infused options to make creative culinary dishes, and an old standby is getting new life as a cannabis alternative. Cannabis hash browns should be on the menu for breakfast this weekend.

What you’ll need:

3 C of finely diced raw potatoes
1 t of grated onion
1 T of chopped parsley
½ t of salt
¼ t of black pepper
2 T Canna Butter*
2 T Cannabis Infused Olive Oil
Optional: Add ¼ cup of diced bell peppers to make this recipe greener, and turn them into O’Brien Potatoes

With a fork, combine the diced potatoes, onion, parsley, salt and black pepper. Heat the cannabutter and Infused olive oil in a 9-inch skillet.

But do not allow the butter to smoke.
Spread the potato mixture over the butter, then press it with a broad knife into a cake shape. Sauté the potatoes slowly, shaking them from time to prevent them from sticking. Be careful not to allow them to burn. Check the bottoms often and when they are nicely browned, cut them in half, turn them over and continue cooking until the underside is browned and crispy. Drain briefly on paper towels and serve piping hot.

To make homemade cannabutter:
Using a large stainless steel pot, add a 4 oz. stick of butter and 16 oz. of water (can be doubled or tripled, but keep the same ratio of butter to water). What cannabis you use for the butter is up to you, some use buds and some use only the shake. Whichever you choose, grind it up in a food processor or blender until you have a fine powder. Add that powder to the pot and bring the mixture to a boil, stirring constantly to blend in the powder. Be careful not to let it boil over and make a huge mess.

Lower the heat to medium and let it boil like that for an hour and a half, stirring occasionally. Most of the water will have evaporated, leaving you with cannabutter. Some will stop here and use the result; others will add some more water and do it all over again to extract more of the THC (tetrahydrocannabinol) from the powder. Let it cool and it is ready to use in any of the recipes calling for cannabutter. Enjoy!
