It is always good to include tomatoes in your list of favorite foods and consume them on a daily basis, because of the many nutritional benefits they bring. Besides, tomatoes are great in any way and combine and enhance almost any dish. From stir-fries to sauces, soups, gazpachos, salads, dressings, or even homemade and organic tomato jams. The fried tomato also exists, being a simple and delicious recipe for this coming weekend. An infusion of cannabis in the equation, would not be bad either.
You will need the following to get started:
3 large green tomatoes, sliced thinly
Jamaican jerk marinade (store-bought)
⅔ C cannabis-infused coconut oil
3 C all-purpose flour or spelt flour
3 C cornmeal
2 C unsweetened plain almond milk
1 t garlic powder
1 t smoked paprika
Salt to taste
Once you have everything on hand, start by heating the oil in a medium skillet over medium-high heat or 350 ℉. Place the milk in a bowl, the flour in a zip-top plastic bag and the cornmeal in a zip-top plastic bag.
In a bowl, marinate each tomato slice with the Jamaican adobo, garlic powder, smoked paprika, and salt. Place about 4-5 tomato slices at a time in the plastic bag containing flour. Shake and coat well. Take the slices out and dip them in the almond milk. Then, drop the slices into the zip-top plastic bag containing cornmeal. Shake and cover well.
Fry them in the oil for 4-5 minutes, turning them at least once and letting them brown on both sides. Place them on a paper towel to absorb and access the oil. Serve and enjoy an extraordinary snack.
